Ingredients

For the Döner

  • 2 lbs ground beef (80–85% lean)
  • 1 medium onion
  • 3 cloves garlic
  • 2 tbsp plain yogurt
  • 2 tbsp Cybele's Harvest Turkish Style Shawarma Seasoning
  • 1.5 tsp salt
  • ½ tsp freshly ground black pepper

For the Vegetables

  • 2 tomatoes, cut into wedges
  • 2 green peppers (Turkish sivri or similar), sliced
  • 2 tbsp olive oil
  • Salt and black pepper to taste

For Serving

  • Warm lavash, pita, or flatbread
  • Sumac Onion Salad
  • Yogurt, tahini, or garlic sauce

Instructions

    Preheat the OvenPreheat oven to 400°F / 204°C. Line a sheet pan with parchment paper.

    Make the Onion–Garlic PuréeIn a food processor, blend onion and garlic into a smooth purée. Do not drain — all juices go into the mixture.

    Prepare the Meat MixtureIn a large bowl, combine ground beef, onion-garlic purée, yogurt, Shawarma Seasoning, salt, and black pepper. Knead vigorously for 1–2 minutes until fully emulsified and sticky.

    Shape the Döner RollsDivide mixture into 3 equal portions. Place one between two sheets of parchment. Roll or press into an even thin rectangle. Starting from the short edge, roll tightly and transfer to the prepared sheet pan. Repeat with remaining portions.

    Add the VegetablesAdd tomatoes and green peppers to the same sheet pan. Toss with olive oil, salt, and pepper.

    BakeBake for about 20 minutes, until the meat is cooked through and lightly browned.

    Unroll and TearRemove from the oven. Carefully unroll the meat logs and tear into large, irregular pieces, spreading evenly across the sheet pan.
