How to Make It
Step-by-Step Instructions:
-
Preheat the Oven
Preheat oven to 400 °F / 204 °C. Line a sheet pan with parchment paper. -
Make the Onion–Garlic Purée
In a food processor, blend onion and garlic into a smooth purée. Do not drain — all juices go into the mixture. -
Prepare the Meat Mixture
In a large bowl, combine ground beef, onion-garlic purée, yogurt, Shawarma Seasoning, salt, and black pepper. Knead vigorously for 1–2 minutes until fully emulsated and sticky. -
Divide the Mixture
Divide the mixture into 3 equal portions. -
Shape the Döner Rolls
Place one portion between two sheets of parchment paper. Roll or press into an even, thin rectangle. Remove the top paper. Starting from the short edge, roll tightly using the bottom parchment and transfer to the prepared sheet pan. Repeat with remaining portions. -
Add the Vegetables
Add tomatoes and green peppers to the same sheet pan. Toss with olive oil, salt, and black pepper. -
Bake
Bake for about 20 minutes, until the meat is cooked through and lightly browned. -
Unroll and Tear
Remove from the oven. Carefully unroll the meat logs and tear the döner into large, irregular pieces, spreading them evenly across the sheet pan. -
Char the Döner
Return the pan to the oven and switch to broil. Broil for 3–5 minutes, stirring once, until the edges are deeply caramelized and lightly crispy. Watch closely to avoid burning.
-
Serve Hot
Remove from oven and serve immediately with warm flatbread, Sumac Onion Salad, and sauce of choice.
