Everything you need to know about Turkish spices

What are Turkish spices?+

Turkish spices are herbs, chili flakes, and spice blends sourced from the Anatolia region of Turkey. The most essential Turkish spices include Aleppo pepper (pul biber), urfa biber (isot pepper), sumac, Turkish oregano, dried mint, and bay leaves. Common Turkish spice blends include baharat, shawarma seasoning, and Mediterranean seasoning. Turkish cooking is known for using fewer spices than many cuisines but selecting them with precision — each spice is sourced from the specific region that grows it best.

What is Aleppo pepper and how do I use it?+

Aleppo pepper (also called pul biber or Halaby pepper) is a coarsely crushed red chili flake from Turkey with a deep burgundy color and slightly oily texture. It has fruity, sun-dried tomato–like flavor with mild heat (around 10,000 Scoville units — much milder than standard crushed red pepper). Use it on eggs, grilled meats, roasted vegetables, pizza, pasta, soups, and hummus. In Turkish homes, Aleppo pepper sits on the table alongside salt and pepper — it's that essential. What spices do I need to start cooking Turkish food?+

Start with three: Aleppo pepper (your everyday heat), sumac (your new acid — use it where you'd use lemon), and urfa biber (your secret weapon for smoky depth). These three cover the foundation of Turkish cooking. Next, add Turkish oregano, dried mint, and bay leaves. For blends, baharat is the most versatile all-purpose spice mix. Our Anatolian Essentials Bundle includes the starter trio at 20% off, or take our spice quiz to get personalized recommendations.

Are Turkish spices very spicy or hot?+

Most Turkish spices are not aggressively hot. Aleppo pepper is milder than a jalapeño (about 10,000 SHU vs. 2,500–8,000), and sumac, oregano, mint, and bay leaves have zero heat. Urfa biber has moderate heat that builds slowly. Turkish cooking values flavor complexity over raw spiciness — the goal is depth and nuance, not burning your mouth. If you prefer mild flavors, sumac, Mediterranean seasoning, and oregano are great places to start.

How should I store Turkish spices?+

Keep Turkish spices in airtight containers in a cool, dark place away from the stove. The natural oils in Aleppo pepper and urfa biber are richer than typical supermarket spices, making proper storage especially important. Mason jars or sealed tins work well. Properly stored, most Turkish spices retain full flavor for 8–12 months. If you buy in larger quantities, decant a small amount for everyday use and keep the rest sealed.

What is the difference between Aleppo pepper and crushed red pepper?+

Aleppo pepper and crushed red pepper look similar but are very different. Aleppo pepper is fruity, complex, and mildly hot with notes of sun-dried tomato and raisin. Crushed red pepper (typically cayenne) is one-dimensionally hot with no depth. Aleppo pepper has an oily, slightly moist texture; crushed red pepper is dry and sharp. If you currently use crushed red pepper, Aleppo pepper is a direct upgrade that adds flavor, not just heat. Read the full comparison →
