Urfa Biber, also known as Isot Pepper and Isot Biber, is a deeply smoky, almost chocolaty chili flake unique to southeastern Turkey. Unlike most chili flakes, it undergoes a two-step sun-drying and sweating process under cloth, which preserves its natural oils and develops its rich, earthy flavor.
Sourcing Details
Cybele's Harvest sources Urfa Biber directly from Turkish farmers in Şanlıurfa, the pepper's ancestral home. After harvesting, peppers are sun-dried by day and wrapped at night, allowing them to ferment slightly and achieve their signature dark maroon-black color and soft, oily texture.
